Peanut Butter-Apple Breakfast Quinoa

Ingredients

1 c. red or white quinoa, rinsed 2 c. water 1/3 c. Daily Pantry Creamy Peanut Butter 2 tablespoons honey, plus more for drizzling 1/2 teaspoon ground cinnamon, plus more for sprinkling 1 large honeycrisp apple, cut into bite-sized chunks

Directions

In a large saucepan, bring quinoa and water to a boil.  Reduce heat to low, then cover and simmer until quinoa is tender and tails come out, about 15-20 minutes. Remove quinoa from heat.  Stir in peanut butter, honey, and cinnamon.  Top with apples, then drizzle with additional honey and sprinkle with cinnamon.  Serve immediately.
